How to make Garlic - Ginger - Green Chilli Pastes
How To Peel Garlic
Tools needed: Chopping board and Large knife
Make sure that your chopping board is secure.
Separate the cloves you need from the bulb of garlic and set one clove down on the chopping board.
Now, taking a large knife, lay it flat on top of the clove of garlic—parallel to board surface.
Punch down onto the side of the blade firmly, being super careful not to come into contact with the blade edge. Lift knife and will see easily garlic skin peeled off .
How to Make Garlic Paste
Add the peeled cloves of garlic to the grinder
Then add vegetable oil just enough to cover the garlic
Grind for about 20 seconds, or until a thick paste is formed
Transfer into glass jar and keep in the refrigerator
For the garlic paste, if you grind the cloves in oil it keeps the garlic paste ‘fresh’ for about 3 weeks in the refrigerator.
Use the cubed ice trays to freeze the paste. It is the easiest way to freeze and use; you can take out as many cubes as you would need for each use. Or individual small packs of the paste may be stored in plastic/Ziploc bags. The frozen paste will last for a few months.
Young ginger has such thin skin, you don't need to peel it at all
Older ginger, like what we typically find in the grocery store, has more papery skin that you may want to peel
How To Peel Ginger
Hold a piece of ginger root firmly in one hand and the bowl of a metal spoon firmly in the other hand. (Note that you can also just break a lobe off of the ginger and peel only that).
Scrape the edge of the spoon against the ginger to peel off the skin.
Work your way around the ginger root, peeling only as much as you think you will use.
How To Make Ginger Paste
Washed, unpeeled or peeled, ginger
Slice the ginger into grinder
Add oil to the sliced ginger (just enough to cover it)
Grind the ginger and oil, for about 20 seconds, until it forms a paste

How To Make Green Chilli Paste
Wash green chilies & remove the stalk
Roughly chop chilies in a grinder (with the seeds retained, of course!)
Add oil
Grind for 10 seconds, or until a smooth paste is formed
Green chilli paste is ready
Grind green chilli with oil it keeps the chillies ‘fresh’ for about 1 week in the refrigerator.
